Ingredients
- 125g All-purpose flour
- 125g Granulated sugar
- 2 large eggs
- 125g unsalted butter, melted
- 1 TL baking powder
- 1 Prise Pinch of salt
- 1/2 TL lemon zest
- 1 EL powdered sugar for dusting
Instructions
- Allow the melted butter to cool slightly.
- In a bowl, whisk eggs and sugar until the mixture is light and thick.
- Sift flour, baking powder, and salt together, then gently fold into the egg mixture. Add the lemon zest.
- Gradually fold the melted butter into the batter until well combined.
- Cover the batter and refrigerate for at least 1 hour (or overnight). This is crucial for the characteristic hump.
- Preheat oven to 200°C (390°F) conventional heat. Grease and flour a madeleine pan.
- Fill each well of the pan about two-thirds full with batter.
- Bake in the preheated oven for 8-12 minutes, or until the edges are golden brown and the madeleines have their characteristic hump.
- Remove madeleines from the oven, let cool briefly, then turn out of the pan. Dust with powdered sugar and serve warm.
