Ingredients
- 250g Honey
- 200g All-purpose flour
- 150g Ground almonds
- 1 Päckchen Gingerbread spice mix
- 1 TL Baking powder
- 1 Prise Salt
- 100g Dark chocolate
- 20 Stück Wafer sheets (approx. 7 cm diameter)
- 50g Powdered sugar
- 2 EL Lemon juice
Instructions
- Gently warm the honey in a small saucepan over low heat until it is liquid. Remove from heat and let cool slightly.
- In a large bowl, combine flour, ground almonds, gingerbread spice mix, baking powder, and salt. Add the slightly cooled honey and knead everything into a smooth dough.
- Spread the dough evenly onto the wafer sheets, leaving a small border. Lightly moisten your hands if needed to make spreading easier.
- Bake the gingerbread on a baking sheet lined with parchment paper in a preheated oven at 170°C (340°F) for 15-20 minutes, until golden brown.
- Let the baked gingerbread cool completely on a wire rack.
- Meanwhile, melt the dark chocolate over a double boiler. Stir together the powdered sugar and lemon juice to form a smooth icing.
- Brush the cooled gingerbread either with the melted chocolate or the lemon icing. Allow the glaze to set before serving the gingerbread.
