  1. Gently warm the honey in a small saucepan over low heat until it is liquid. Remove from heat and let cool slightly.
  2. In a large bowl, combine flour, ground almonds, gingerbread spice mix, baking powder, and salt. Add the slightly cooled honey and knead everything into a smooth dough.
  3. Spread the dough evenly onto the wafer sheets, leaving a small border. Lightly moisten your hands if needed to make spreading easier.
  4. Bake the gingerbread on a baking sheet lined with parchment paper in a preheated oven at 170°C (340°F) for 15-20 minutes, until golden brown.
  5. Let the baked gingerbread cool completely on a wire rack.
  6. Meanwhile, melt the dark chocolate over a double boiler. Stir together the powdered sugar and lemon juice to form a smooth icing.
  7. Brush the cooled gingerbread either with the melted chocolate or the lemon icing. Allow the glaze to set before serving the gingerbread.
