  1. Rinse the short-grain rice under cold water until the water runs clear. In a large pot, heat the milk over medium heat until it just begins to simmer.
  2. Add the prepared rice, sugar, and a pinch of salt to the milk. Stir everything well to prevent sticking to the bottom of the pot.
  3. Reduce the heat to the lowest setting and let the rice pudding simmer, covered, for about 30-35 minutes. Stir every few minutes to prevent burning and ensure the rice cooks evenly and absorbs the liquid.
  4. Remove the pot from the heat and stir in the vanilla sugar and butter. Let the rice pudding rest, covered, for another 10 minutes to allow it to swell further and become even creamier.
  5. In a small bowl, mix the cinnamon with 2 tablespoons of sugar to make cinnamon sugar.
  6. Serve the warm rice pudding in bowls, sprinkled generously with cinnamon sugar or with a dollop of applesauce or fruit compote.
