General Tso Chicken

Ingredients
- 500g Chicken breast
- 80g Cornstarch
- 3 EL Soy sauce (light)
- 3 EL Sugar
- 4 red chilies (dried)
- 2 EL Rice vinegar
- 1 EL Sesame oil
- 3 Zehen Garlic
- 2 cm Fresh ginger
- 200ml Chicken broth
- Öl Oil for frying
- 2 EL Green onions (chopped)
Instructions
- Cut the chicken breast into bite-sized pieces. In a bowl, mix with 3 tablespoons of cornstarch and 1 tablespoon of soy sauce until all pieces are fully coated. Let rest for 10 minutes.
- Heat enough oil in a wok or deep pot to 170-175°C. Fry the marinated chicken pieces in batches until golden brown and crispy. This takes about 3-4 minutes per batch.
- Place the fried chicken pieces on a wire rack or paper towels to drain excess oil.
- For the sauce, finely chop the garlic and ginger. In a bowl, whisk together soy sauce, sugar, rice vinegar, sesame oil, chicken broth, and the remaining cornstarch (5 tablespoons). Set aside the dried chilies.
- Heat a clean wok or large skillet over medium heat. Add a teaspoon of oil and quickly sauté the chopped chilies, garlic, and ginger until fragrant. Be careful not to burn the garlic.
- Pour the prepared sauce mixture into the wok, stirring constantly. Let the sauce simmer, continuing to stir until it thickens and achieves a syrupy consistency. This will take about 2-3 minutes.
- Add the fried chicken pieces to the thickened sauce and toss well until all chicken pieces are fully coated in the sauce.
- Serve the General Tso's Chicken immediately with rice and garnish with chopped green onions.
