  1. Cut the chicken breast into bite-sized pieces. In a bowl, mix with 3 tablespoons of cornstarch and 1 tablespoon of soy sauce until all pieces are fully coated. Let rest for 10 minutes.
  2. Heat enough oil in a wok or deep pot to 170-175°C. Fry the marinated chicken pieces in batches until golden brown and crispy. This takes about 3-4 minutes per batch.
  3. Place the fried chicken pieces on a wire rack or paper towels to drain excess oil.
  4. For the sauce, finely chop the garlic and ginger. In a bowl, whisk together soy sauce, sugar, rice vinegar, sesame oil, chicken broth, and the remaining cornstarch (5 tablespoons). Set aside the dried chilies.
  5. Heat a clean wok or large skillet over medium heat. Add a teaspoon of oil and quickly sauté the chopped chilies, garlic, and ginger until fragrant. Be careful not to burn the garlic.
  6. Pour the prepared sauce mixture into the wok, stirring constantly. Let the sauce simmer, continuing to stir until it thickens and achieves a syrupy consistency. This will take about 2-3 minutes.
  7. Add the fried chicken pieces to the thickened sauce and toss well until all chicken pieces are fully coated in the sauce.
  8. Serve the General Tso's Chicken immediately with rice and garnish with chopped green onions.
