Croque Madame
The Croque Madame is a luxurious take on the classic French ham and cheese sandwich, the Croque Monsieur. It features ham and melted cheese (often Gruyère or Emmental) between two slices of bread, baked with béchamel sauce, and famously topped with a fried egg resembling a lady's hat.

Ingredients
- 4 Scheiben Slices of bread (brioche-style)
- 4 Scheiben Slices of cooked ham
- 100g Grated Gruyère cheese
- 2 Eggs
- 2 EL Butter
- 2 EL Flour
- 250ml Milk
- 1 Prise Pinch of nutmeg
- Salz Salt
- Pfeffer Pepper
Instructions
- For the béchamel sauce: Melt 1 tbsp butter in a saucepan. Add flour and stir for 1 minute. Gradually whisk in milk until the sauce thickens. Season with salt, pepper, and nutmeg.
- Preheat oven to 200°C (400°F). Spread two slices of bread with some béchamel, top with ham and half of the cheese, then cover with the remaining bread slices.
- Spread the remaining béchamel sauce over the top of the sandwiches and sprinkle with the remaining cheese.
- Place sandwiches on a baking sheet and bake in the oven for 10-15 minutes, until the cheese is melted and golden brown.
- While the sandwiches bake, melt 1 tbsp butter in a frying pan and fry the eggs sunny-side up until the whites are set and the yolks are still runny.
- Top each baked sandwich with a fried egg and serve immediately.
