French Shepherd's Pie (Hachis Parmentier)
Hachis Parmentier is the French take on Shepherd's Pie, named after Antoine-Augustin Parmentier who championed the potato in France. It features a layer of minced meat, often with vegetables, topped with creamy mashed potatoes.

Ingredients
- 1 kg Potatoes, starchy
- 500g Ground beef
- 1 Onion, finely chopped
- 2 Garlic cloves, minced
- 150ml Beef broth
- 2 EL Tomato paste
- 60g Butter
- 100ml Milk
- 50g Grated Gruyère cheese
- 1 EL Olive oil
- Prise Salt
- Prise Black pepper
- 1 TL Dried thyme
Instructions
- Peel and quarter the potatoes, then boil in salted water until tender (approx. 15-20 minutes).
- While potatoes cook, heat olive oil in a large skillet. Sauté onion and garlic until softened.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Stir in tomato paste and thyme, then add beef broth and simmer for 5-7 minutes until the sauce slightly thickens. Season with salt and pepper.
- Drain the cooked potatoes. Add butter and milk, then mash until smooth. Season with salt and pepper.
- Spoon the beef mixture into an oven-safe dish. Spread the mashed potatoes evenly on top and sprinkle with grated cheese.
- Bake in a preheated oven at 190°C (375°F) for 20-25 minutes, or until golden brown and bubbly.
