Savory Tarte Tatin
Tarte Tatin is an upside-down tart, traditionally made with apples, but also offers a delicious savory version with caramelized onions or tomatoes. This savory rendition hails from French country cooking, surprising with a sweet-savory flavor combination and a buttery-tender texture, perfect alongside a salad.

Ingredients
- 500 g Puff pastry (store-bought)
- 4 Large onions
- 50 g Butter
- 2 EL Olive oil
- 2 EL Balsamic vinegar
- 1 EL Brown sugar
- 1 Zweig Thyme sprig
- 1 TL Salt
- 1/2 TL Black pepper
- 50 g Goat cheese (optional)
Instructions
- Peel and thinly slice the onions.
- In an oven-safe skillet (approx. 24 cm diameter) that can also be used on the stovetop, melt butter and olive oil. Add the onions and caramelize over medium-low heat for about 20-25 minutes until very soft and golden brown. Stir occasionally.
- Add balsamic vinegar, brown sugar, thyme, salt, and pepper to the onions. Simmer for another 5 minutes until the liquid has evaporated and the onions are beautifully glazed. Remove the thyme sprig.
- Preheat the oven to 200°C (fan-assisted/conventional).
- If desired, crumble the goat cheese over the onions in the skillet.
- Roll out the puff pastry into a circle slightly larger than the skillet. Carefully place it over the onions, tucking the edges down into the skillet.
- Bake in the preheated oven for 25-30 minutes, until the puff pastry is golden brown and puffed up.
- Remove the tart from the oven and let cool for 5 minutes. Then place a large plate or serving platter over the skillet and carefully invert the tart. Serve immediately.
