  1. Peel and quarter potatoes, then boil in salted water until very tender. Drain and set aside.
  2. Finely chop onion and garlic. Heat olive oil in a large pan and sauté onion and garlic until translucent.
  3. Add ground beef and brown, breaking it up with a spoon. Drain any liquid. Stir in tomato paste and thyme.
  4. Add beef broth and simmer for 10 minutes until the liquid has almost completely reduced. Season with salt and pepper.
  5. Mash the cooked potatoes with milk, butter, salt, and pepper until creamy.
  6. Fill an oven-safe dish with the ground beef mixture. Spread the mashed potatoes evenly over top and create patterns with a fork.
  7. Sprinkle with grated Gruyère and bake in a preheated oven at 200°C (400°F) for about 25-30 minutes, until the top is golden brown.
  8. Let rest for a few minutes before serving.
