Tarte Flambée (Flammkuchen)
Tarte Flambée, or Flammkuchen, is a traditional Alsatian specialty resembling a thin-crust pizza. It consists of a very thinly rolled bread dough, typically topped with crème fraîche, onions, and smoked bacon, then baked in a wood-fired oven, which gives it its distinctive smoky flavor. Ingredients
- 250g All-purpose flour
- 125ml Lukewarm water
- 1 EL Olive oil
- 1/2 TL Salt
- 150g Crème fraîche
- 1 Large onion
- 150g Smoked bacon (lardons)
- Prise Black pepper
Instructions
- Knead flour, water, olive oil, and salt to form a smooth dough. Let the dough rest for 15 minutes.
- Preheat the oven to 220°C (425°F) top/bottom heat. Line a baking sheet with parchment paper.
- Peel the onion, halve it, and cut into very thin rings. Dice the bacon into small cubes.
- Roll out the dough very thinly on a floured surface into a rectangle or circle and place it on the prepared baking sheet.
- Spread the crème fraîche evenly over the dough, leaving a small border. Top with onion rings and bacon cubes. Season with pepper.
- Bake in the preheated oven for 10-15 minutes until the crust is crispy and the topping is lightly browned.
