  1. Knead flour, water, olive oil, and salt to form a smooth dough. Let the dough rest for 15 minutes.
  2. Preheat the oven to 220°C (425°F) top/bottom heat. Line a baking sheet with parchment paper.
  3. Peel the onion, halve it, and cut into very thin rings. Dice the bacon into small cubes.
  4. Roll out the dough very thinly on a floured surface into a rectangle or circle and place it on the prepared baking sheet.
  5. Spread the crème fraîche evenly over the dough, leaving a small border. Top with onion rings and bacon cubes. Season with pepper.
  6. Bake in the preheated oven for 10-15 minutes until the crust is crispy and the topping is lightly browned.
