  2. Place all the prepared vegetables into a large bowl. Add the minced garlic and chopped onion.
  3. Toss with olive oil, oregano, thyme, salt, and pepper. Stir well to ensure all vegetables are evenly coated.
  4. Spread the vegetables in a large baking dish or two smaller ones. Avoid overcrowding the dish to allow for proper roasting.
  5. Bake for about 60-75 minutes, stirring halfway through, until the vegetables are tender and lightly browned.
  6. Garnish with fresh parsley and serve. Can be enjoyed warm or at room temperature.
