Ingredients
- 500g 500g potatoes, peeled and cubed
- 3 3 zucchini, sliced
- 2 2 eggplants, cubed
- 4 4 tomatoes, diced
- 2 2 green bell peppers, diced
- 1 1 large onion, chopped
- 4 4 garlic cloves, minced
- 150 ml 150 ml extra virgin olive oil
- 1 TL 1 tsp dried oregano
- 1 TL 1 tsp dried thyme
- Salz Salt
- Schwarzer Pfeffer Black pepper
- Frische Petersilie Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 180°C (350°F) fan/conventional.
- Place all the prepared vegetables into a large bowl. Add the minced garlic and chopped onion.
- Toss with olive oil, oregano, thyme, salt, and pepper. Stir well to ensure all vegetables are evenly coated.
- Spread the vegetables in a large baking dish or two smaller ones. Avoid overcrowding the dish to allow for proper roasting.
- Bake for about 60-75 minutes, stirring halfway through, until the vegetables are tender and lightly browned.
- Garnish with fresh parsley and serve. Can be enjoyed warm or at room temperature.
