Pastirma (Grilled Ground Beef Patties)
While pastirma is often known as air-dried beef, a variation exists as grilled ground beef patties seasoned with typical oriental spices like fenugreek. These juicy patties make for a hearty main course.

Ingredients
- 600g 600g ground beef (at least 20% fat)
- 1 1 onion, very finely grated
- 3 3 garlic cloves, minced
- 2 EL 2 tbsp chopped fresh parsley
- 1 TL 1 tsp ground cumin
- 1 TL 1 tsp ground coriander
- 1/2 TL 1/2 tsp ground fenugreek (Çemen)
- 1/4 TL 1/4 tsp cayenne pepper (optional)
- Salz Salt
- Schwarzer Pfeffer Black pepper
- Olivenöl Olive oil for frying
Instructions
- In a large bowl, combine the ground beef, grated onion, minced garlic, parsley, cumin, coriander, fenugreek, and cayenne pepper (if using).
- Season with salt and pepper and mix everything thoroughly until the spices are evenly distributed. Do not overmix.
- Let the mixture rest in the refrigerator for at least 30 minutes.
- Shape the mixture into 4-6 equal-sized patties. Flatten them slightly.
- Heat a little olive oil in a grill pan or on a grill. Grill the patties over medium-high heat for about 4-5 minutes per side, until cooked through and nicely browned.
- Serve immediately. Pairs well with grilled vegetables or a simple salad.
