Grilled Sardines
These grilled sardines are a true poem for all lovers of Mediterranean cuisine. Served with a squeeze of lemon and fresh herbs, they make a light yet satisfying main course.

Ingredients
- 500 g Fresh sardines, gutted and cleaned
- 4 EL Extra virgin olive oil
- 1 Lemon, cut into wedges
- 1 TL Dried oregano
- 1/2 TL Garlic powder
- 1 Prise Sea salt flakes
- Nach Geschmack Freshly ground black pepper
- 2 EL Fresh parsley, chopped
Instructions
- Rinse the gutted sardines under cold water and pat them thoroughly dry with paper towels. Ensure they are as dry as possible for crispy skin.
- In a large bowl, toss the sardines with 2 tablespoons of olive oil, dried oregano, garlic powder, sea salt, and freshly ground black pepper. Ensure all sardines are well coated.
- Preheat your grill or grill pan to high heat (about 200-220°C / 400-425°F). Lightly brush the grates or pan with olive oil to prevent sticking.
- Carefully place the seasoned sardines on the hot grill or in the grill pan. Grill for 3-4 minutes per side, until golden brown and cooked through.
- Once cooked, remove the sardines from the grill and arrange them on a serving platter. Drizzle with the remaining olive oil and garnish generously with fresh chopped parsley.
- Serve the grilled sardines immediately with fresh lemon wedges for squeezing. A simple Greek salad or crusty bread makes an excellent accompaniment.
