  1. Cube the beef and season with salt and pepper.
  2. Heat olive oil in a large pot. Sear the beef in batches and set aside.
  3. Sauté onions and garlic in the same pot.
  4. Deglaze with red wine and let it reduce.
  5. Add crushed tomatoes, bay leaves, oregano, and cinnamon (if using).
  6. Return the seared beef to the pot. Add enough water or broth to almost cover the meat.
  7. Bring to a boil, then reduce heat, cover, and simmer for at least 2 hours, until the meat is very tender.
  8. Remove bay leaves before serving. Season with salt and pepper.
