  1. Place the lamb chops in a large bowl. In a small bowl, combine olive oil, lemon juice, minced garlic, dried oregano, sea salt, and freshly ground black pepper.
  2. Pour the marinade over the lamb chops, ensuring all sides are well coated. Let the chops marinate for at least 20 minutes at room temperature. For a more intense flavor, you can marinate them in the refrigerator for up to 4 hours.
  3. Preheat a grill or grill pan to medium-high heat (about 200°C / 400°F). Lightly brush the grill grates with oil to prevent sticking.
  4. Place the marinated lamb chops on the hot grill. Grill for 3-5 minutes per side, depending on your desired doneness (rare to medium).
  5. Remove the lamb chops from the grill and transfer them to a cutting board or plate. Loosely tent them with aluminum foil and let them rest for 5 minutes to allow the juices to redistribute. This makes the chops more tender and juicy.
  6. Garnish the lamb chops with fresh oregano before serving. They pair wonderfully with a Greek salad and roasted potatoes.
