  1. Set water to boil for the spaghetti and cook according to package directions.
  2. Meanwhile, heat some olive oil in a large pot or deep skillet.
  3. Add the ground beef and cook, breaking it up into crumbles, until browned. Drain off any excess fat.
  4. Add the chopped onion and garlic and sauté until softened (approx. 5 minutes).
  5. Stir in the tomato paste and cook for 1 minute.
  6. Deglaze with red wine (if using) and let it reduce briefly.
  7. Add the diced tomatoes, oregano, cinnamon, salt, and pepper. Stir well.
  8. Bring the sauce to a simmer, then reduce heat and let it cook for approx. 20-25 minutes, until thickened.
  9. Drain the cooked spaghetti and add it directly to the meat sauce.
  10. Toss everything together well and serve onto plates. Sprinkle with grated Parmesan cheese.
