Ingredients
- 800g Pork shoulder or neck, cut into cubes
- 100ml Olive oil
- Saft von 1 Juice of 1 lemon
- 2 Zehen Garlic cloves, minced
- 1 EL Dried oregano
- 1 TL Salt
- 1 TL Black pepper
- Holzspieße, eingeweicht Wooden skewers, soaked
Instructions
- Place the bite-sized pork cubes – ideally from the shoulder or neck for extra juiciness – into a large bowl. Ensure the pieces are uniformly sized so they cook evenly later. This is the crucial first step in preparing your perfect Souvlaki.
- Now add 100ml of high-quality olive oil, the juice of one freshly squeezed lemon, two finely minced garlic cloves, one tablespoon of dried oregano, one teaspoon of salt, and one teaspoon of black pepper. Mix everything thoroughly with your hands, ensuring each piece of meat is fully coated. Marinate the pork for at least 30 minutes, or ideally several hours or overnight in the refrigerator, to allow the flavors to fully develop.
- Thread the marinated pork evenly onto the wooden skewers, which should have been soaked in water for at least 30 minutes prior. Be careful not to pack the meat cubes too tightly together, ensuring optimal heat distribution and even cooking. This prevents the meat from steaming instead of grilling.
- Preheat your grill or a grill pan to medium-high heat, ideally around 200-220°C (390-430°F). This is essential for developing those desirable char marks and a beautiful crust. Test the temperature by sprinkling a few drops of water onto the surface; it should sizzle and evaporate immediately.
- Place the skewers on the hot grill and cook each souvlaki for 3-4 minutes per side. Turn them regularly until they are golden brown all over and reach an internal temperature of 63°C (145°F). This typically takes about 7 minutes in total. Focus on achieving a nice char without burning.
- Serve the finished Souvlaki skewers immediately after grilling to ensure the best flavor and juiciness. Traditionally, fresh lemon wedges, tzatziki, and a Greek salad are perfect accompaniments. Enjoy your meal before the meat cools down!
