Stifado (Beef Stew)

Ingredients
- 1 kg Beef stew meat
- 500g Pearl onions, peeled
- 2 Garlic cloves, minced
- 400g Crushed tomatoes
- 150ml Red wine
- 100ml Olive oil
- 2 Bay leaves
- 1 Cinnamon stick
- 4-5 Whole cloves
- 1 TL Dried oregano
- Salz Salt
- Pfeffer Pepper
Instructions
- Cube the beef and season with salt and pepper.
- Heat olive oil in a large pot. Sear the beef in batches and set aside.
- Sauté the pearl onions in the same pot until lightly browned.
- Add garlic, bay leaves, cinnamon stick, and cloves, and sauté briefly.
- Return the seared beef to the pot.
- Deglaze with red wine and let it reduce.
- Add crushed tomatoes and oregano. Add enough water or broth to cover the meat.
- Bring to a boil, then reduce heat, cover, and simmer for at least 2-3 hours, until the meat is very tender.
- Remove cinnamon stick, bay leaves, and cloves before serving. Season with salt and pepper.
