  1. Peel the potatoes and cut them into 2-3 cm cubes. Break the cauliflower into bite-sized florets.
  2. In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the cumin seeds and sauté until fragrant (about 30 seconds).
  3. Add the onion, garlic, and ginger and sauté until the onions are soft and golden brown (about 5-7 minutes).
  4. Add the turmeric powder, coriander powder, chili powder, and a pinch of salt. Stir well and cook for 1 minute until the spices are fragrant.
  5. Add the potatoes and cauliflower to the pot and mix well, ensuring they are fully coated with the spices. Add water.
  6. Cover the pot and reduce the heat to low. Simmer for 15-20 minutes, or until the vegetables are tender, stirring occasionally to prevent sticking. Add a little more water if needed.
  7. Garnish with fresh cilantro and serve hot with rice or naan bread.
