  1. Wash and pat dry the okra pods, then trim the ends. Cut the pods into 2-3 cm pieces. Heat 1 tbsp oil in a large pan and sauté the okra over medium heat for about 8-10 minutes until slightly crisp. Remove from the pan and set aside.
  2. In the same pan, heat the remaining 1 tbsp oil. Add cumin seeds and sauté until fragrant, about 30 seconds.
  3. Add the chopped onion and sauté until golden brown, approximately 5-7 minutes. Then stir in the ginger-garlic paste and cook for another minute until fragrant.
  4. Add the chopped tomatoes and mix well. Season with turmeric, coriander, Garama Masala, chili powder and salt. Stir everything together and simmer for 5 minutes until the tomatoes are soft and the oil separates.
  5. Return the sautéed okra to the pan and gently mix with the spice sauce. Cook for another 5-7 minutes to allow the flavors to meld.
  6. Garnish with fresh coriander and serve hot. Excellent with naan bread, roti, or rice.
