Bhindi Masala

Ingredients
- 400g Okra
- 2 EL Vegetable oil
- 1 Onion, large
- 2 Tomatoes, medium
- 1 TL Cumin seeds
- 1/2 TL Turmeric powder
- 1 TL Coriander powder
- 1/2 TL Garam Masala
- 1/4 TL Chilli powder
- 1 EL Ginger-garlic paste
- 1/2 TL Salt
- 2 EL Fresh coriander, chopped
Instructions
- Wash and pat dry the okra pods, then trim the ends. Cut the pods into 2-3 cm pieces. Heat 1 tbsp oil in a large pan and sauté the okra over medium heat for about 8-10 minutes until slightly crisp. Remove from the pan and set aside.
- In the same pan, heat the remaining 1 tbsp oil. Add cumin seeds and sauté until fragrant, about 30 seconds.
- Add the chopped onion and sauté until golden brown, approximately 5-7 minutes. Then stir in the ginger-garlic paste and cook for another minute until fragrant.
- Add the chopped tomatoes and mix well. Season with turmeric, coriander, Garama Masala, chili powder and salt. Stir everything together and simmer for 5 minutes until the tomatoes are soft and the oil separates.
- Return the sautéed okra to the pan and gently mix with the spice sauce. Cook for another 5-7 minutes to allow the flavors to meld.
- Garnish with fresh coriander and serve hot. Excellent with naan bread, roti, or rice.
