Instructions
- Prepare the samosas according to package instructions in the oven at 180°C convection or in an air fryer until crispy and golden brown. Set aside and keep warm.
- In a medium pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 3-5 minutes until soft and translucent.
- Add the garlic and ginger and sauté for another 1-2 minutes until fragrant. Be careful not to burn the garlic.
- Stir in the cumin, turmeric, and chili powder and cook for 30 seconds until the spices are fragrant.
- Add the strained or chopped tomatoes. Mix well, reduce heat, and simmer the sauce covered for 8-10 minutes to allow the flavors to meld.
- Whisk the natural yogurt until smooth in a small bowl, then gently stir it into the curry sauce, stirring constantly to prevent curdling. Add the Garam Masala.
- Season the sauce with salt and pepper to taste and let it simmer gently for another 2-3 minutes until slightly thickened.
- Gently place the prepared samosas into the hot curry sauce and briefly turn them to ensure they are well coated.
- Serve immediately, generously garnished with fresh cilantro. This dish pairs wonderfully with rice or naan bread.
