  1. Prepare the samosas according to package instructions in the oven at 180°C convection or in an air fryer until crispy and golden brown. Set aside and keep warm.
  2. In a medium pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 3-5 minutes until soft and translucent.
  3. Add the garlic and ginger and sauté for another 1-2 minutes until fragrant. Be careful not to burn the garlic.
  4. Stir in the cumin, turmeric, and chili powder and cook for 30 seconds until the spices are fragrant.
  5. Add the strained or chopped tomatoes. Mix well, reduce heat, and simmer the sauce covered for 8-10 minutes to allow the flavors to meld.
  6. Whisk the natural yogurt until smooth in a small bowl, then gently stir it into the curry sauce, stirring constantly to prevent curdling. Add the Garam Masala.
  7. Season the sauce with salt and pepper to taste and let it simmer gently for another 2-3 minutes until slightly thickened.
  8. Gently place the prepared samosas into the hot curry sauce and briefly turn them to ensure they are well coated.
  9. Serve immediately, generously garnished with fresh cilantro. This dish pairs wonderfully with rice or naan bread.
