  1. Remove the Akkawi cheese from its packaging and rinse under cold water. Then, soak it in a bowl with fresh cold water for about 10-15 minutes to remove excess salt. Change the water once if the cheese is very salty.
  2. While the cheese is desalting, coarsely chop the pistachios and toast the sesame seeds in a small pan over medium heat until lightly golden and fragrant. Be careful not to burn the sesame.
  3. Remove the desalinated Akkawi cheese from the water and pat it thoroughly dry with paper towels. Then, slice the cheese into pieces about 1 cm thick, or crumble it into bite-sized pieces.
  4. Arrange the sliced or crumbled cheese on a serving plate. Drizzle the honey generously over the cheese. For a special touch, a hint of orange blossom water can optionally be mixed with the honey.
  5. Evenly sprinkle the toasted pistachios and sesame seeds over the honey and cheese. If desired, add a pinch of sea salt to enhance the flavors.
  6. Finally, garnish with a sprig of fresh mint and drizzle with a shot of extra virgin olive oil. Serve immediately with warm pita bread.
