Shanklish Salad

Ingredients
- 200 g Shanklish cheese
- 2 mittelgroße Tomatoes
- 1 kleine red onion
- 3 EL Olive oil
- 1/2 Bund fresh parsley
- 1/4 Bund fresh mint
- 1/2 TL dried thyme
- 1 Prise Chili flakes
- nach Geschmack Salt
- nach Geschmack black pepper
Instructions
- Gently crumble the Shanklish cheese with your hands or mash it with a fork until it has a coarse consistency. Be careful not to make the crumbs too small.
- Wash the tomatoes and cut them into small cubes. Peel the red onion and finely dice it as well.
- Rinse fresh parsley and mint under running water, pat them dry, and finely chop them. Make sure to only use the leaves.
- In a medium bowl, combine the crumbled Shanklish cheese, diced tomatoes and onions, and the chopped herbs.
- Add olive oil, dried thyme, and chili flakes. Mix everything well so that all ingredients are evenly coated with the oil and spices.
- Season with salt and freshly ground black pepper to taste. Start with small amounts and adjust seasoning as needed, as Shanklish can already be salty. Let the salad rest for at least 10 minutes before serving to allow the flavors to meld.
