  1. In a large bowl, thoroughly combine flour, active dry yeast, sugar, and salt. Add olive oil and warm water, then knead everything to form a smooth and elastic dough.
  2. Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rest in a warm place for 60 minutes, or until its volume has doubled.
  3. For the filling, thoroughly wash and roughly chop the fresh spinach. Finely dice the onion. Heat some olive oil in a pan and sauté the onions until translucent. Add the spinach and let it wilt.
  4. Drain the wilted spinach and squeeze it very well to remove excess water. In a bowl, combine the squeezed spinach with lemon juice, sumac, salt, pepper, and a pinch of grated nutmeg. Taste and adjust seasoning as needed.
  5. Preheat the oven to 200°C (390°F) conventional heat. Roll out the yeast dough on a lightly floured surface and cut out circles about 8-10 cm in diameter.
  6. Place a tablespoon of the spinach filling in the center of each dough circle. Fold the edges of the dough upwards and form triangles, gently pressing the filling and firmly sealing the edges to prevent any filling from escaping.
  7. Place the formed Fatayer on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  8. Remove the Fatayer from the oven and serve warm. They are excellent as a side dish to hummus or a refreshing yogurt dip.
