Arabic Flatbread
This authentic Arabic flatbread is perfect as a side dish for mezze or as a base for sandwiches. With its soft texture and slightly nutty flavor, it's a delight at any time of day.

Ingredients
- 500g All-purpose flour
- 7g Dry yeast
- 1 TL Salt
- 2 EL Olive oil
- 300ml Warm water
- 1 TL Sugar
- 1 EL Sesame seeds
- 1 EL Nigella seeds
Instructions
- In a large bowl, combine flour, dry yeast, salt, and sugar. Add the lukewarm water and olive oil, then knead everything into a smooth dough until it is elastic and no longer sticky. This will take about 8-10 minutes.
- Place the dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm place for about 60 minutes, until its volume has doubled.
- Transfer the risen dough to a lightly floured surface and divide it into 6 equal portions. Shape each portion into a ball and let them rest under a cloth for another 10 minutes.
- Roll out each dough ball into a round flatbread about 0.5 cm thick. Prick several times with a fork and optionally sprinkle with sesame seeds and nigella seeds.
- Heat a heavy skillet or cast-iron pan over medium to high heat. Bake the flatbreads one by one in the hot pan. Flip after about 2-3 minutes per side, until golden brown and puffed up.
- Serve the finished flatbreads immediately or keep them warm wrapped in a clean kitchen towel.
