  1. Heat the olive oil in a small, non-stick pan over medium heat.
  2. Crack the eggs one by one into a small bowl and carefully slide them into the hot pan to make sunny-side up eggs. Make sure the eggs do not touch each other.
  3. Cook the eggs for 2-3 minutes, or until the whites are set and the edges are crispy, but the yolk is still runny. Season the eggs with a pinch of salt and pepper.
  4. Generously sprinkle the za'atar spice blend over the fried eggs.
  5. Briefly warm the flatbread in a separate pan or in the microwave.
  6. Serve the Za'atar eggs immediately with the warm flatbread. Optionally, sprinkle with chopped parsley and serve with lemon wedges.
