  1. Rinse the rice thoroughly under cold water until the water runs clear. Combine the rice with 300ml of water in a pot, bring to a boil, then reduce heat and simmer for 15 minutes until all water is absorbed. Remove from heat and let stand, covered, for another 10 minutes.
  2. While the rice is cooking, prepare the miso soup. Heat the dashi broth in a saucepan. Once hot (not boiling), take a small amount of broth, dissolve the miso paste in it, then return it to the saucepan. Be careful not to boil the miso soup, as this will diminish its flavor.
  3. Cut the silken tofu into small cubes (about 1-2 cm) and gently add them to the miso soup. Let the tofu steep in the soup for about 2-3 minutes while you prepare the salmon.
  4. Preheat a grill pan or oven to medium heat. Lightly season the salmon fillet with soy sauce and mirin. Sear the salmon in the grill pan for about 3-4 minutes per side, or bake in the oven until cooked through and nicely golden brown.
  5. Cut the nori sheets into small strips or squares. Once the rice has rested, fluff it with a fork.
  6. Assemble the Japanese breakfast by arranging the rice, salmon, and miso soup on separate plates or in bowls. Garnish the rice with the nori strips and a sprinkle of sesame seeds. Serve immediately and enjoy.
