Ingredients
- 200g Sushi rice
- 300ml Water
- 2 EL White miso paste
- 400ml Dashi broth
- 100g Silken tofu
- 150g Salmon fillet
- 1 TL Soy sauce
- 1 TL Mirin
- 2 Blätter Nori seaweed
- 1 Prise Sesame seeds
Instructions
- Rinse the rice thoroughly under cold water until the water runs clear. Combine the rice with 300ml of water in a pot, bring to a boil, then reduce heat and simmer for 15 minutes until all water is absorbed. Remove from heat and let stand, covered, for another 10 minutes.
- While the rice is cooking, prepare the miso soup. Heat the dashi broth in a saucepan. Once hot (not boiling), take a small amount of broth, dissolve the miso paste in it, then return it to the saucepan. Be careful not to boil the miso soup, as this will diminish its flavor.
- Cut the silken tofu into small cubes (about 1-2 cm) and gently add them to the miso soup. Let the tofu steep in the soup for about 2-3 minutes while you prepare the salmon.
- Preheat a grill pan or oven to medium heat. Lightly season the salmon fillet with soy sauce and mirin. Sear the salmon in the grill pan for about 3-4 minutes per side, or bake in the oven until cooked through and nicely golden brown.
- Cut the nori sheets into small strips or squares. Once the rice has rested, fluff it with a fork.
- Assemble the Japanese breakfast by arranging the rice, salmon, and miso soup on separate plates or in bowls. Garnish the rice with the nori strips and a sprinkle of sesame seeds. Serve immediately and enjoy.
