Ingredients
- 100g Mung bean flour
- 150ml Water
- 2 Eggs
- 3 Stangen Spring onions, chopped
- 2 EL Hoisin sauce
- 1 EL Tianmianjiang (sweet bean paste)
- 4 Wonton crisps
- 1 EL Vegetable oil
- 1 Prise Salt
Instructions
- In a bowl, whisk together mung bean flour with water and a pinch of salt until you have a smooth batter. The batter should have a consistency similar to crêpe batter.
- Heat a large non-stick pan or crêpe maker over medium heat and add a bit of vegetable oil. Pour a thin layer of batter into the pan and quickly spread it evenly with a spatula or the back of a ladle to form a thin crêpe.
- Immediately crack an egg onto the crêpe and spread it evenly with the spatula. Sprinkle some chopped spring onions over the egg.
- Once the egg has set, carefully flip the crêpe. Spread a mixture of Hoisin sauce and Tianmianjiang onto the cooked side.
- Place the wonton crisps in the center of the Jianbing. Optionally, add other fillings like cilantro or pickled vegetables.
- Fold the Jianbing from both sides towards the center, then fold it in half again to enclose the filling. Serve immediately.
