  1. Remove the chorizo from its casing and cook in a large skillet over medium heat for about 5-7 minutes, breaking it up with a spoon, until crispy and cooked through. Remove the cooked chorizo from the skillet and set aside.
  2. In a bowl, whisk the eggs with salt and pepper. Add the eggs to the same skillet used for the chorizo and scramble for about 2-3 minutes, stirring occasionally, until cooked through but still slightly moist. Remove the eggs from the skillet and combine with the chorizo.
  3. Wipe the skillet clean and heat 1/2 tablespoon of vegetable oil over medium heat. Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese over one half of the tortilla.
  4. Spoon half of the chorizo and egg mixture over the cheese. Fold the other half of the tortilla over the filling and press down gently.
  5. Cook the quesadilla for 2-3 minutes per side, until golden brown and crispy, and the cheese is melted. Repeat with the remaining tortilla and filling.
  6. Remove the cooked quesadillas from the heat and let them rest on a cutting board for 1-2 minutes.
  7. Cut each quesadilla in half or thirds. Garnish with fresh cilantro and serve with salsa and sour cream on the side.
