Breakfast Quesadillas

Ingredients
- 4 Stück Large Flour Tortillas
- 3 große Large Eggs
- 150 g Cheddar Cheese
- 100 g Spicy Chorizo Sausage
- 1 EL Vegetable Oil
- 1/4 TL Salt
- 1/4 TL Freshly Ground Black Pepper
- 2 EL Fresh Cilantro (chopped)
- 2 EL Salsa (mild or spicy)
- 2 EL Sour Cream or Crème fraîche
Instructions
- Remove the chorizo from its casing and cook in a large skillet over medium heat for about 5-7 minutes, breaking it up with a spoon, until crispy and cooked through. Remove the cooked chorizo from the skillet and set aside.
- In a bowl, whisk the eggs with salt and pepper. Add the eggs to the same skillet used for the chorizo and scramble for about 2-3 minutes, stirring occasionally, until cooked through but still slightly moist. Remove the eggs from the skillet and combine with the chorizo.
- Wipe the skillet clean and heat 1/2 tablespoon of vegetable oil over medium heat. Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese over one half of the tortilla.
- Spoon half of the chorizo and egg mixture over the cheese. Fold the other half of the tortilla over the filling and press down gently.
- Cook the quesadilla for 2-3 minutes per side, until golden brown and crispy, and the cheese is melted. Repeat with the remaining tortilla and filling.
- Remove the cooked quesadillas from the heat and let them rest on a cutting board for 1-2 minutes.
- Cut each quesadilla in half or thirds. Garnish with fresh cilantro and serve with salsa and sour cream on the side.
