These authentic Memelas are a delicious and satisfying Mexican breakfast option, featuring a crispy masa base, rich refried beans, melted cheese, and fresh salsa.

Ingredients
- 250 g Masa Harina
- 250 ml Warm water
- 1/2 TL Salt
- 200 g Refried Beans
- 100 g Oaxaca Cheese
- 100 ml Red Salsa
- 2 EL Vegetable Oil
- 1/4 Red Onion
- 2 EL Cilantro
Instructions
- In a large bowl, combine the masa harina and salt. Gradually add the warm water, kneading until a soft, pliable dough forms. Let the dough rest for 10 minutes.
- Divide the dough into 8 equal portions. Shape each portion into an oval about 10-12 cm long and 0.5 cm thick. Gently pinch the edges to create a slight rim.
- Heat a comal or cast-iron skillet over medium heat. Add a teaspoon of vegetable oil to the pan. Place the memelas on the comal and cook for about 2-3 minutes per side, until lightly browned and puffed up.
- Spread the warm refried beans generously over each cooked memela. Sprinkle with the grated Oaxaca cheese.
- Return the memelas to the comal and cook for another 1-2 minutes, until the cheese is melted and bubbly.
- Remove the melted memelas from the comal and immediately top with a generous spoonful of salsa roja.
- Garnish with finely diced red onion and fresh cilantro, if desired. Serve immediately.
