Snowballs

Ingredients
- 300g All-purpose flour (Type 405)
- 2 Egg yolks
- 50g Butter, room temperature
- 3 EL Cream
- 1 Prise Salt
- 1 TL Lemon zest, grated
- 1/2 TL Vanilla extract
- 500 ml Vegetable oil for frying
- 100g Powdered sugar for dusting
- 1 EL Cinnamon (optional)
Instructions
- In a large bowl, knead together the flour, egg yolks, room-temperature butter, cream, salt, lemon zest, and vanilla extract until a smooth dough forms. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- On a lightly floured surface, roll out the dough very thinly, about 2-3 mm thick.
- Cut the dough into strips approximately 2 cm wide. Shape the strips into small, irregular balls or "snowballs." Press them lightly so they don't fall apart during frying.
- Heat the vegetable oil in a deep pot or deep fryer to approximately 170-175°C (340-345°F). The temperature is crucial for even browning.
- Fry the snowballs in batches in the hot oil at about 170-175°C for approximately 3-5 minutes per batch until golden brown. Turn them several times to ensure even cooking.
- Remove the fried snowballs from the oil with a slotted spoon and drain them on paper towels to remove excess grease.
- Generously dust the still-warm snowballs with powdered sugar. For a more even coating, you can shake them in a bag with powdered sugar. Optionally, dust with cinnamon.
