  1. In a large bowl, thoroughly mix the ground lamb, chopped parsley, finely chopped onion, minced garlic, cumin, coriander powder, paprika powder, cayenne pepper (if using), salt, and pepper. Knead the mixture well to combine all the flavors.
  2. Preheat your grill to medium heat or heat a large skillet over medium heat with a little olive oil.
  3. Carefully cut each flatbread in half or open it like a pocket. Spread the meat mixture evenly and thinly inside the flatbreads, creating a layer that is not too thick.
  4. Lightly drizzle the outside of the filled flatbreads with olive oil.
  5. Place the arayes on the preheated grill or in the skillet. Grill or pan-fry them for about 4-6 minutes per side, until the flatbread is golden brown and crispy and the minced meat is cooked through.
  6. Remove the arayes from the grill or skillet and let them rest briefly before cutting them into quarters and serving.
