  1. Cut the pita bread into bite-sized pieces and spread them on a baking sheet. Drizzle with a little olive oil and bake in a preheated oven at 180°C (350°F) for about 8-10 minutes, until golden and crispy. Alternatively, toast in a dry pan.
  2. While the bread is toasting, wash and chop the tomatoes, cucumber, and romaine lettuce into bite-sized pieces. Finely chop the parsley and mint, and finely dice the red onion.
  3. In a large salad bowl, combine all the chopped vegetables, herbs, and red onion.
  4. For the dressing, whisk together olive oil, pomegranate molasses, lemon juice, sumac, salt, and black pepper in a small bowl until well combined.
  5. Add the toasted pita bread to the prepared vegetables in the salad bowl. Pour the dressing over the salad and gently toss everything together until all ingredients are well coated.
  6. Serve the Fattoush immediately to ensure the bread remains crispy. Optionally, garnish with extra mint leaves and a drizzle of pomegranate molasses.
