Ingredients
- 2 Stück Pita bread
- 3 Stück Roma tomatoes
- 1 Stück Cucumber
- 1/2 Kopf Romaine lettuce
- 1/2 Bund Fresh parsley
- 2 EL Fresh mint, chopped
- 1/4 Tasse Red onion, chopped
- 2 TL Sumac
- 2 EL Pomegranate molasses
- 3 EL Extra virgin olive oil
- 1 EL Lemon juice
- 1/2 TL Salt
- 1/4 TL Black pepper
Instructions
- Cut the pita bread into bite-sized pieces and spread them on a baking sheet. Drizzle with a little olive oil and bake in a preheated oven at 180°C (350°F) for about 8-10 minutes, until golden and crispy. Alternatively, toast in a dry pan.
- While the bread is toasting, wash and chop the tomatoes, cucumber, and romaine lettuce into bite-sized pieces. Finely chop the parsley and mint, and finely dice the red onion.
- In a large salad bowl, combine all the chopped vegetables, herbs, and red onion.
- For the dressing, whisk together olive oil, pomegranate molasses, lemon juice, sumac, salt, and black pepper in a small bowl until well combined.
- Add the toasted pita bread to the prepared vegetables in the salad bowl. Pour the dressing over the salad and gently toss everything together until all ingredients are well coated.
- Serve the Fattoush immediately to ensure the bread remains crispy. Optionally, garnish with extra mint leaves and a drizzle of pomegranate molasses.
