Ingredients
- 400g Rice noodles
- 300g Beef fillet
- 2l Beef broth
- 3 Stück Star anise
- 1 Stange Cinnamon stick
- 5cm Ginger
- 2 Shallots
- 2 EL Fish sauce
- 1 EL Sugar
- 200g Bean sprouts
- 1 Bund Cilantro
- 1 Bund Mint
- 1 Lime
Instructions
- Bring the beef broth to a boil in a large pot. Add star anise, cinnamon stick, roughly chopped ginger, and halved shallots. Simmer everything for at least 60 minutes to develop the flavors.
- After simmering, remove the solid spices from the broth. Season with fish sauce and sugar. Add more salt if needed.
- Slice the beef fillet very thinly. This is best achieved when the meat is slightly frozen.
- Prepare the rice noodles according to package instructions. Typically, they are soaked in hot water for a few minutes or briefly boiled.
- Divide the cooked rice noodles among four serving bowls. Arrange the thin beef slices on top.
- Pour the hot broth over the meat and noodles. The heat of the broth will cook the thinly sliced beef instantly.
- Garnish with fresh bean sprouts, chopped cilantro, and mint. Serve with a lime wedge for squeezing.
