  1. Bring the beef broth to a boil in a large pot. Add star anise, cinnamon stick, roughly chopped ginger, and halved shallots. Simmer everything for at least 60 minutes to develop the flavors.
  2. After simmering, remove the solid spices from the broth. Season with fish sauce and sugar. Add more salt if needed.
  3. Slice the beef fillet very thinly. This is best achieved when the meat is slightly frozen.
  4. Prepare the rice noodles according to package instructions. Typically, they are soaked in hot water for a few minutes or briefly boiled.
  5. Divide the cooked rice noodles among four serving bowls. Arrange the thin beef slices on top.
  6. Pour the hot broth over the meat and noodles. The heat of the broth will cook the thinly sliced beef instantly.
  7. Garnish with fresh bean sprouts, chopped cilantro, and mint. Serve with a lime wedge for squeezing.
