  1. Cook the wheat noodles according to package instructions in plenty of salted water until al dente. Then drain and set aside.
  2. In a small bowl, whisk together tahini, chili oil, soy sauce, rice vinegar, and sugar until a smooth sauce forms. Add the minced garlic and grated ginger and mix well.
  3. Heat a little oil in a pan or wok over medium-high heat. Brown the ground pork until it is cooked through and lightly browned.
  4. Add the ground Sichuan pepper to the pork and fry briefly until fragrant.
  5. Divide the cooked noodles among serving bowls. Pour the prepared sauce over the noodles.
  6. Arrange the fried ground pork on top of the noodles.
  7. Garnish with chopped green onions and roasted, chopped peanuts and serve immediately.
