  1. Cut the beef into bite-sized pieces. Peel and dice the sweet potatoes.
  2. In a large pot or wok, heat the vegetable oil over medium heat. Add the Massaman Curry paste and sauté for about 1 minute, stirring constantly, until fragrant.
  3. Add the beef and sear on all sides until lightly browned.
  4. Add the coconut milk, fish sauce, and palm sugar. Stir well and bring to a simmer.
  5. Add the diced sweet potatoes. Reduce heat, cover the pot, and let the curry simmer for 25 minutes, or until the beef is tender and the sweet potatoes are soft.
  6. Add the peanuts and simmer for another 5 minutes.
  7. Season with fresh lime juice to taste. Add more fish sauce or palm sugar if needed.
  8. Serve the Massaman Curry in deep plates and garnish with fresh cilantro leaves. Serve with basmati rice.
