Massaman Curry

Ingredients
- 500g Beef
- 400ml Coconut milk
- 3 EL Massaman Curry Paste
- 2 Sweet Potatoes
- 80g Peanuts
- 1 EL Vegetable Oil
- 1 EL Fish Sauce
- 1 TL Palm Sugar
- 1 Lime
- Frische Korianderblätter Fresh Cilantro Leaves
Instructions
- Cut the beef into bite-sized pieces. Peel and dice the sweet potatoes.
- In a large pot or wok, heat the vegetable oil over medium heat. Add the Massaman Curry paste and sauté for about 1 minute, stirring constantly, until fragrant.
- Add the beef and sear on all sides until lightly browned.
- Add the coconut milk, fish sauce, and palm sugar. Stir well and bring to a simmer.
- Add the diced sweet potatoes. Reduce heat, cover the pot, and let the curry simmer for 25 minutes, or until the beef is tender and the sweet potatoes are soft.
- Add the peanuts and simmer for another 5 minutes.
- Season with fresh lime juice to taste. Add more fish sauce or palm sugar if needed.
- Serve the Massaman Curry in deep plates and garnish with fresh cilantro leaves. Serve with basmati rice.
