Carnival Fritters
These crispy Carnival Fritters are a festive delight, perfect for the Carnival season. Golden brown on the outside and airy on the inside, with sweet raisins and a hint of grappa.

Ingredients
- 300 g All-purpose flour
- 2 Eggs
- 50 g Sugar
- 1 Päckchen Vanilla sugar
- 1 Prise Salt
- 100 g Raisins
- 2 EL Grappa
- 1 TL Baking powder
- 500 ml Vegetable oil
- 50 g Powdered sugar
Instructions
- In a large bowl, mix together the flour, sugar, vanilla sugar, baking powder, and salt. Form a well in the center.
- Add the eggs and grappa to the well and whisk everything from the center outwards with a whisk or hand mixer to form a smooth batter. Add the raisins and fold them in well.
- Heat the vegetable oil in a deep pot or a deep fryer to 170-175°C. The temperature is crucial for evenly golden brown fritters.
- Using two spoons, scoop out small portions of dough and carefully slide them into the hot oil. Do not fry too many fritters at once to maintain a stable oil temperature.
- Fry the fritters until golden brown, turning them once. This takes about 3-5 minutes per batch.
- Remove from the oil with a slotted spoon and drain on paper towels to remove excess fat.
- Generously dust the warm fritters with powdered sugar and serve immediately.
