  1. In a large bowl, mix together the flour, sugar, vanilla sugar, baking powder, and salt. Form a well in the center.
  2. Add the eggs and grappa to the well and whisk everything from the center outwards with a whisk or hand mixer to form a smooth batter. Add the raisins and fold them in well.
  3. Heat the vegetable oil in a deep pot or a deep fryer to 170-175°C. The temperature is crucial for evenly golden brown fritters.
  4. Using two spoons, scoop out small portions of dough and carefully slide them into the hot oil. Do not fry too many fritters at once to maintain a stable oil temperature.
  5. Fry the fritters until golden brown, turning them once. This takes about 3-5 minutes per batch.
  6. Remove from the oil with a slotted spoon and drain on paper towels to remove excess fat.
  7. Generously dust the warm fritters with powdered sugar and serve immediately.
