Italian Apple Cake

- 4 mittelgroße Apples (e.g. Braeburn or Elstar)
- 200g All-purpose flour
- 150g Sugar
- 3 Eggs (medium size)
- 80g Butter, melted
- 1 Päckchen Baking powder
- 1 Prise Salt
- Abrieb von 1 Zest of 1 organic lemon
- 1 TL Vanilla extract
- 2 EL Powdered sugar for dusting
Instructions
- Preheat the oven to 180°C (350°F) top/bottom heat. Grease a springform pan (approx. 24 cm diameter) well and lightly dust it with flour.
- Peel, core, and thinly slice the apples. Set aside.
- In a large bowl, beat eggs and sugar until the mixture is light and creamy. Add the vanilla extract and lemon zest and mix well.
- Mix the flour with baking powder and salt. Gradually fold the flour mixture into the egg-sugar mixture until just combined. Finally, fold in the melted butter.
- Gently fold the apple slices into the batter. Pour the batter into the prepared springform pan and smooth the top.
- Bake the cake for about 40-45 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar before serving.
