  1. Preheat the oven to 180°C (350°F) top/bottom heat. Grease a springform pan (approx. 24 cm diameter) well and lightly dust it with flour.
  2. Peel, core, and thinly slice the apples. Set aside.
  3. In a large bowl, beat eggs and sugar until the mixture is light and creamy. Add the vanilla extract and lemon zest and mix well.
  4. Mix the flour with baking powder and salt. Gradually fold the flour mixture into the egg-sugar mixture until just combined. Finally, fold in the melted butter.
  5. Gently fold the apple slices into the batter. Pour the batter into the prepared springform pan and smooth the top.
  6. Bake the cake for about 40-45 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Dust with powdered sugar before serving.
