Caprese Cake
This delicious Torta Caprese is a gluten-free chocolate cake from Capri, made with almonds. A true delight for chocolate lovers!

Ingredients
- 200g dark chocolate
- 200g unsalted butter
- 200g ground almonds
- 150g sugar
- 4 eggs (medium)
- 1 Prise salt
- 1 TL vanilla extract
- 50g powdered sugar
Instructions
- Preheat the oven to 170°C (340°F) top/bottom heat. Grease and flour a 24 cm springform pan or line it with parchment paper.
- Melt the dark chocolate and butter together in a double boiler or over low heat. Stir until smooth and well combined, then set aside to cool.
- In a large bowl, beat the eggs with the sugar and a pinch of salt until the mixture is light and fluffy. Add the vanilla extract.
- Gently fold in the ground almonds, followed by the cooled chocolate-butter mixture, into the egg mixture. Be careful to maintain the airiness of the batter.
- Pour the batter into the prepared springform pan and bake for 35-40 minutes in the preheated oven. The cake is ready when a wooden skewer inserted into the center comes out clean.
- After baking, let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Before serving, dust with powdered sugar. Buon Appetito!
