Freekeh with Chicken

Ingredients
- 300g Freekeh
- 4 Stück Chicken drumsticks
- 1 EL Olive oil
- 1 groß Onion
- 2 Zehen Garlic
- 1 TL Cumin
- 1/2 TL Coriander powder
- 1/4 TL Cinnamon
- 400ml Chicken broth
- 50g Slivered almonds
- 2 EL Fresh parsley, chopped
- nach Geschmack Salt and pepper
Instructions
- Season the chicken drumsticks generously with salt, pepper, cumin, coriander, and cinnamon.
- In a large pot or deep skillet, heat the olive oil over medium-high heat. Brown the seasoned chicken drumsticks on all sides until golden. This will take about 8-10 minutes.
- Remove the chicken drumsticks from the pan and set aside. Add the chopped onion and garlic to the pan and sauté for about 3-4 minutes until soft and fragrant.
- Add the freekeh to the pan and toast for about 2 minutes, stirring, until lightly fragrant. Add the chicken broth and the browned chicken drumsticks.
- Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the freekeh is cooked through and has absorbed the liquid.
- Meanwhile, toast the slivered almonds in a small dry pan over medium heat until golden brown. Be careful not to burn them.
- Once the freekeh is cooked, remove the pot from the heat and let it rest, covered, for another 5 minutes.
- Fluff with a fork, then sprinkle with the toasted slivered almonds and fresh parsley. Serve immediately.
