  1. Season the chicken drumsticks generously with salt, pepper, cumin, coriander, and cinnamon.
  2. In a large pot or deep skillet, heat the olive oil over medium-high heat. Brown the seasoned chicken drumsticks on all sides until golden. This will take about 8-10 minutes.
  3. Remove the chicken drumsticks from the pan and set aside. Add the chopped onion and garlic to the pan and sauté for about 3-4 minutes until soft and fragrant.
  4. Add the freekeh to the pan and toast for about 2 minutes, stirring, until lightly fragrant. Add the chicken broth and the browned chicken drumsticks.
  5. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the freekeh is cooked through and has absorbed the liquid.
  6. Meanwhile, toast the slivered almonds in a small dry pan over medium heat until golden brown. Be careful not to burn them.
  7. Once the freekeh is cooked, remove the pot from the heat and let it rest, covered, for another 5 minutes.
  8. Fluff with a fork, then sprinkle with the toasted slivered almonds and fresh parsley. Serve immediately.
