Lemon Granita

Ingredients
- 300 ml Water
- 150 g Sugar
- 4 Organic lemons
- 200 ml Freshly squeezed lemon juice
- 1 Prise Pinch of salt
- 1 EL Lemon zest (grated)
- 2 Zweige Fresh mint sprigs
- 1 Untreated lemon (for garnish)
Instructions
- In a medium saucepan, combine water and sugar. Heat over medium heat, stirring constantly, until the sugar is completely dissolved, forming a clear simple syrup.
- Remove the simple syrup from the heat and let it cool down completely. For faster cooling, the saucepan can be placed in an ice bath.
- While the syrup is cooling, squeeze the organic lemons to obtain 200 ml of fresh lemon juice. Finely zest one lemon to get about one tablespoon of lemon zest, making sure to only use the yellow part and avoid the white pith.
- Combine the completely cooled simple syrup, fresh lemon juice, lemon zest, and a pinch of salt in a shallow metal pan or freezer-safe container, mixing well.
- Place the mixture in the freezer for 30 minutes. After this time, the granita will start to freeze around the edges, forming a solid layer.
- After 30 minutes, vigorously fluff the frozen mixture with a fork, scraping the ice crystals from the edges towards the center. Repeat this process every 30-45 minutes to achieve a fine, flaky texture.
