Ingredients
- 500 ml heavy cream
- 80 g sugar
- 1 vanilla bean
- 3 Blatt gelatin sheets
- 200 g fresh berries (e.g., raspberries, strawberries)
- 2 EL powdered sugar
- 1 EL lemon juice
- 1 Prise salt
Instructions
- Soak the gelatin sheets in a bowl of cold water for about 5-10 minutes until softened.
- Gently heat the heavy cream, sugar, and scraped vanilla bean (split lengthwise) in a saucepan over medium heat. Ensure the mixture does not boil.
- Remove the saucepan from the heat. Squeeze out the excess water from the softened gelatin sheets and stir them into the warm cream mixture until fully dissolved. Remove the vanilla bean pod.
- Pour the panna cotta mixture evenly into four ramekins or glasses. Refrigerate for at least 4 hours, or ideally overnight, until set.
- For the berry sauce, combine the fresh berries, powdered sugar, and lemon juice in a small saucepan over low heat. Simmer until the berries break down and the sauce slightly thickens. Strain through a sieve for a smoother sauce, if desired.
- Carefully unmold the panna cotta (a quick dip in warm water can help) or serve directly in glasses. Drizzle with the prepared berry sauce and garnish with fresh berries as desired.
