クーララキアは、ギリシャの伝統的な三つ編み状のバタークッキーで、特にイースターによく食べられますが、一年中楽しめます。ほんのり甘く、バターの風味が豊かで、レモンやバニラの香りがほのかにするのが特徴です。

作り方

  1. Preheat oven to 180°C (350°F) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar with an electric mixer or stand mixer until light and fluffy.
  3. Beat in the eggs one at a time, then add vanilla extract and lemon zest and mix well.
  4. In a separate bowl, combine flour and baking powder.
  5. Gradually add the flour mixture to the butter-sugar mixture, mixing on low speed until just combined into a dough. Add 1-2 tbsp of milk if the dough is too stiff.
  6. Chill the dough in the refrigerator for about 30 minutes to make it easier to shape.
  7. Roll the dough into strands about 1-1.5 cm thick and shape them into braids or simply bend them into S-shapes.
  8. Place the shaped koulourakia on the prepared baking sheets.
  9. Brush the cookies with the beaten egg and sprinkle with sesame seeds if desired.
  10. Bake in the preheated oven for about 15-20 minutes, until lightly golden brown. They should not become too dark.
  11. Let the koulourakia cool completely on the baking sheet before storing in an airtight container.
