  1. Mix flour, sugar, yeast, and salt in a bowl.
  2. Gradually add lukewarm water, whisking to form a smooth, thick batter.
  3. Cover the batter and let it rise in a warm place for about 45-60 minutes, until bubbly.
  4. Heat vegetable oil in a deep pot to 170°C (340°F).
  5. Using two spoons, scoop small portions of batter and carefully drop them into the hot oil.
  6. Fry the loukoumades until golden brown on all sides (about 3-4 minutes per batch).
  7. Remove with a slotted spoon and drain on paper towels.
  8. Warm the honey with cinnamon.
  9. Drizzle the loukoumades with the honey-cinnamon syrup and sprinkle with walnuts if desired.
