Zucchini Fritters (Small Portion)
These savory zucchini fritters are a popular meze, but also a light and tasty breakfast. They are crispy on the outside and soft on the inside, with the fresh taste of zucchini, herbs, and feta. They are often served with a dollop of yogurt.

Ingredients
- 2 Medium zucchini, grated
- 100g Feta cheese, crumbled
- 50g All-purpose flour
- 2 Eggs, lightly beaten
- 1/4 Bund Fresh mint, chopped
- 1/4 Bund Fresh parsley, chopped
- 1 Spring onion, finely chopped
- 1/2 TL Salt
- 1/4 TL Black pepper
- Olivenöl zum Braten Olive oil for frying, as needed
Instructions
- Place the grated zucchini in a sieve, salt it, and let it sit for 15 minutes to draw out water. Then, squeeze the zucchini very dry.
- In a large bowl, combine the squeezed zucchini with feta, flour, eggs, mint, parsley, spring onion, salt, and pepper.
- The batter should be thick. Add a little more flour if needed.
- Heat olive oil in a large skillet over medium-high heat.
- Drop spoonfuls of batter into the hot oil, flattening them slightly to form small fritters.
- Fry each side for about 3-4 minutes, until golden brown and crispy.
- Drain the finished kolokythokeftedes on paper towels.
- Serve warm, optionally with Greek yogurt.
