  1. Dissolve yeast in lukewarm water with a pinch of sugar and let sit for 10 minutes.
  2. Mix flour, sugar, and salt in a large bowl.
  3. Add the yeast mixture, egg, and olive oil. Knead into a soft, elastic dough.
  4. Cover the dough and let it rise in a warm place for 1-2 hours, until doubled in size.
  5. For the syrup, mix sugar and water in a saucepan. Add the lemon slice and bring to a boil. Simmer for 5 minutes, then remove from heat and let cool.
  6. Roll out the dough on a lightly floured surface and cut into small strips or squares.
  7. Heat oil in a deep pot. Fry the dough pieces in batches until golden brown and puffy (about 2-3 minutes per side).
  8. Remove the fried dough pieces with a slotted spoon and immediately place them in the cooled syrup. Let soak for a few minutes.
  9. Remove the saiten from the syrup and let drain on a rack.
  10. Serve warm or at room temperature.
