Simit is a circular, sesame-crusted bread ring, popular throughout Turkey and the Greek-speaking world. It has a slightly sweet flavor and a delightfully crispy crust, thanks to its abundant sesame seeds.

Ingredients
- 500g All-purpose flour (Type 550)
- 300ml Lukewarm water
- 50g Sugar
- 10g Active dry yeast
- 1 Teelöffel Salt
- 50ml Olive oil
- 100g Sesame seeds
- 50ml Molasses (or honey)
Instructions
- Dissolve yeast and sugar in lukewarm water and let sit for 10 minutes.
- Mix flour and salt in a large bowl.
- Add the yeast mixture and olive oil to the flour and knead into a smooth dough.
- Cover the dough and let it rise in a warm place for about 1 hour, until doubled in size.
- Divide the dough into 6 equal portions and roll them into long ropes.
- Form each rope into a ring, pinching the ends together securely.
- Dip the rings first into the molasses, then coat them generously with sesame seeds.
- Place the simit on a baking sheet lined with parchment paper and bake at 200°C (400°F) for 15-20 minutes, until golden brown.
