Arroz Glutinoso Frito Tailandés con Plátano

Ingredientes
- 200 g Arroz glutinoso cocido
- 2 Plátanos maduros
- 50 g Coco rallado
- 2 tbsp Azúcar
- 1/2 cdta Sal
- 2 tbsp Aceite vegetal
- 2 tbsp Cacahuetes tostados, picados
- 1/4 cdta Extracto de vainilla
- 1 pinch Canela
Instrucciones
- Prepare the glutinous rice according to package directions and let it cool. Slice the ripe bananas into approximately 1 cm thick rounds.
- In a large bowl, thoroughly combine the cooled glutinous rice, banana slices, shredded coconut, sugar, salt, vanilla extract, and cinnamon. Ensure all ingredients are evenly distributed.
- Heat the vegetable oil in a large frying pan or wok over medium heat. The oil should coat the entire surface of the pan.
- Add the glutinous rice and banana mixture to the hot pan. Lightly press the mixture down to encourage even browning.
- Fry the mixture for about 8-10 minutes, stirring occasionally. Use a spatula to gently move the mixture around and ensure it doesn't stick, allowing it to lightly caramelize.
- Add the chopped toasted peanuts, if using. Fry for another minute to gently warm the peanuts and release their flavor.
- Remove the pan from the heat and divide the fried mixture among serving plates. Serve the dish warm for optimal flavor and texture.
