  2. In a large bowl, thoroughly combine the cooled glutinous rice, banana slices, shredded coconut, sugar, salt, vanilla extract, and cinnamon. Ensure all ingredients are evenly distributed.
  3. Heat the vegetable oil in a large frying pan or wok over medium heat. The oil should coat the entire surface of the pan.
  4. Add the glutinous rice and banana mixture to the hot pan. Lightly press the mixture down to encourage even browning.
  5. Fry the mixture for about 8-10 minutes, stirring occasionally. Use a spatula to gently move the mixture around and ensure it doesn't stick, allowing it to lightly caramelize.
  6. Add the chopped toasted peanuts, if using. Fry for another minute to gently warm the peanuts and release their flavor.
  7. Remove the pan from the heat and divide the fried mixture among serving plates. Serve the dish warm for optimal flavor and texture.
