- 200 g Harina de arroz glutinoso
- 400 ml Leche de coco
- 150 g Azúcar
- 1 pinch Sal
- 50 g Coco rallado tostado
- 1 tbsp Aceite vegetal
- 1/2 cdta Extracto de vainilla
- 1x Hoja de plátano (opcional)
Instrucciones
- Prepare a steamer and lightly grease a square or rectangular baking pan (approx. 20x20 cm) with vegetable oil. Optionally, line the pan with a trimmed banana leaf for authentic flavor and easier removal.
- In a large bowl, combine glutinous rice flour, sugar, and salt, mixing thoroughly until well combined. Then add the vanilla extract.
- Gradually pour in the coconut milk while continuously whisking until a smooth, lump-free batter forms. Ensure all ingredients are fully dissolved.
- Carefully pour the prepared batter into the baking pan. Make sure the surface of the batter is evenly distributed.
- Place the pan in the preheated steamer and steam the cake for about 35-40 minutes. Insert a toothpick into the center to check if it comes out clean, ensuring the cake is fully cooked.
- Carefully remove the cake from the steamer and let it cool in the pan for about 15 minutes before inverting it onto a wire rack. This prevents the cake from breaking.
- Generously sprinkle the cooled cake with the toasted shredded coconut. Then, let the cake cool completely to room temperature before cutting it into squares or diamonds.
- Cut the sticky rice cake into squares or diamond shapes and serve at room temperature. It tastes best when freshly prepared.
